3 whole chicken breasts
1/2 eggplant, very coarsely chopped
1 onion, thickly sliced
1 red bell pepper, very coarsely chopped
1 zucchini, halved and very thickly sliced
…and so on
Preheat oven to 400°. Lay chicken in a glass 13×9 dish and spread veggie chunks over the top. Drizzle olive oil over everything and sprinkle with oregano and a little salt. Cover with foil and bake 35 minutes, then let rest for 10. Serve with salt & pepper.
BONUS MENU IDEA: Begin with fresh bread and Brie, then serve the chicken &c. with red wine. Mmmmm.
